Located at the top of the Heron Tower, Sushi Samba is one of the City’s most exclusive dining destinations, featuring the highest outdoor terraces in Europe and panoramic views across London. Spiller Builders are proud to have delivered multiple projects for Sushi Samba as main contractors.
 
Our work has included a full office fit out and a complex ducting replacement project spanning all four kitchens across Sushi Samba and Duck & Waffle. The office fit out involved full coordination of all subcontracted trades, ensuring timely delivery while meeting the stringent operational and safety regulations of the Tower.
 
The ducting replacement required meticulous logistical planning to minimise restaurant downtime. With Duck & Waffle operating 24/7 and Sushi Samba closing for only a few hours each day, we developed an hour-by-hour programme to ensure all kitchens reopened on or ahead of schedule—meeting the client's exacting expectations.
